Researchers have found that by cutting up your carrots before cooking them, some of the natural medicinal and anti-cancer properties are lost.
http://www.guardian.co.uk/lifeandstyle/2009/jun/17/carrots-health-benefits-cooking
Cooking them whole will presumably take longer, so using more energy and creating more pollution, and you would need to be more careful in picking carrots of an even size.
I suppose the ultimate solution, to obtain most benefit, would be always to eat them raw, but would we then end up with orange skin and large fluffy ears?
The article claims that dicing carrots is still the most popular way of serving them in Britain, which surprises slightly.
The Poll option doesn't seem to work here, but how do you prefer your carrots?...

Cooked al dente
Cooked soft
Stewed like grandma had them

Hmmmm Carrots.
Straight from the ground is good. Bit of wipe - eat everything- roots leaves and soil.
Whole Steamed is the best way to cook em I think. |

Grated! I was thinking about this the other day.. I really like grated carrot on a salad but I wouldn't want one say, sliced! I wonder why? they should taste the same...
On a roast dinner... cooked soft with butter on them...
I used to eat them raw but not now. _________________ Johnnie Walker read out my message on Pirate Radio! 13/8/07

My wife likes one grated on salad as well; I prefer them whole when raw like that. For cooking I cut them into rustic chunks and like them best just as they're about to go soft. _________________ Ron |

I add a teaspoon of sugar to the water before boiling, seems to bring the flavour out more.

You'll have the food police after you, Helen!
I don't now, but I was always taught to add salt to the water all root vegetables were cooked in, and sugar to garden peas.
Sugar, salt and fat are heinous crimes these days - the FSA are actually forcing manufacturers to reduce levels of all three, whether the public wants them to or not. It may be healthier for you, but in most cases things don't taste as good. _________________ Ron |
